Is there any way of adding multiple room options that you can select at different prices under the same listing?

Please ask the host for the iCal link for testing purposes, maybe there’s a non-compatible link? It should lead to the calendar file in ICS format.
Yes, if you use listings as accommodations then the price means price per night (unless you have daily prices enabled), unfortunately it’s not possible to enable another pricing logic without customizations in this case.
