I have a listing with dates blocked, but those dates are still showing on the calendar and allowing users to book. The listing has booking days selected and a booking start and end time. I am trying to block several months when the listing is not available, but those months are still showing.

Please disable third-party plugins and customizations (if there are any) and check if this issue persists. If you use a caching plugin, make sure that caching is disabled for logged-in users. There may also be caching or specific settings on the part of the hosting provider, I recommend checking them additionally.
I have checked all third party plugins and have cleared the cache. The problem is still happening.
