I am using ExpertHive in Spanish and made a few custom emails.
Such as this reminder email.
However, it seems that the booking date comes out as English - any way to translate this?
If so, where do I find this?

Please provide more details; what language is your admin panel in? Since we are using this function date_i18n() – Function | Developer.WordPress.org, which translates dates to the language selected in Settings > General.
My admin panel is set to Spanish, but on my personal admin account I set it to English.
Could this be fixed by changing my personal one to Spanish as well? A bit annoying but could it when less work needs to be done on the admin.

Yes, try switching the language in the personal settings as well, as HivePress follows the language specified in the WP settings.
