I know from another thread that extending bookings is not yet a feature, so a user will have to create a new booking for additional days, but if they do this, any discount they received will not be applied i.e. they received 30% off for booking 7+ days, and they want to “extend” for another few days, but the system would charge them the non-discounted rate rather than honouring the discount.
Is there any workaround for this? Perhaps setting up a discount code for them or?
Unfortunately, there is no workaround for this. We recommend canceling the first booking and re-booking. Then the discount will be applied correctly.
Darn, okay. Would be super helpful for hosts to easily extend rentals.

Yes, it is possible. But only the administrator can create coupons globally in WooCommerce > Coupons.
