New Categories - only 8 are shown?

I am VERY new so please forgive my basic question. The video implied there is no limit to the number of categories that can be added. However even though I can add for example, 10 , I can only ever see the first 8??
So I rationalised my categories and created sub-categories within those. However when navigating to them the description I added is not visible?
I either want to see all categories (they have no parent) or the 8 categories and when drilling down , the sub categories with their descriptions.
What am I misunderstanding?

I should say I am using the express hive theme

Please edit the Home page and select the Categories block in the editor, then you can change the number of categories to show on the right (in the Block Settings).
