I need to allow vendors to add listings with a ‘Select Image’ button, but the images must come from my WordPress gallery, not from the users’ devices. Is this possible?

Unfortunately, there is no such option, you need to upload these images as they are deleted when the listing is deleted. That is, they are assigned to the listing.
