I’m trying to use the category list block on my homepage because I can’t edit the Listings Page enough but when I use the category block it only shows 3 categories. How can I make it show all of them?

You can change this number in Pages > Edit home page > select categories block > and on the right sidebar, select the quantity to display.

Please try to re-save the categories that are hidden.
If this issue exists, please disable third-party plugins and customizations (if there are any) and check if this issue persists. If you use a caching plugin, make sure that caching is disabled for logged-in users.
