Some vendors sell their products in cash (no online payment). There’s a way the order status is set automatically to completed, instead of processing? Else, there is some way to vendors change the order status instead the administrator?

Unfortunately there’s no such option, but you can search for the available WooCommerce code snippets, I’m sure there’s a snippet for the payment method condition that switches the order status. There may be another issue depending on the payout mode on your site, e.g. with cash payments and Manual payouts balance will still show the cash earnings so you may accidentally pay them out twice.
