For some reason this listing is showing my featured image, making my event look screwy… where it’s not displaying on my other listings? Any ideas why that might be happening?

Please disable third-party plugins and customizations (if there are any) and check if this issue persists. If you use a caching plugin, make sure that caching is disabled for logged-in users. Also, if you have this image displayed in the gallery, then it is most likely selected as a featured or uploaded image for listing, I recommend checking the listing settings.
