Regions for new listings is only set when using the default “Default public token” on Mapbox. If you instead create a new private token, with the same scopes but limited to a specific allowed URL, regions are not set anymore. This is not so good since the default public token could be used by others. It is preferred to use a private token.
Other things, such as search and maps etc works with the private tokens.
