I’m wondering if there is an option or plugin to work with hive that offers the ability for users to subscribe to a service. Currently, we do writing on the website but would like to offer a monthly package of writing.
Is this an option? If so what plugin (I’m assuming) do I need to set up with it?

Yes, if you use Marketplace then you can try the WooCommerce Subscriptions extension. If you install it, then a new Billing Period field will appear in the listing form, it allows switching from one-time payments to weekly, monthly, and annual payments.
