Can I keep my current wordpress theme and use your extensions to manage the directory?
If we purchase: All Extensions - Get unlimited access to all extensions | HivePress Extensions, does this include themes? I would think it would for that price.

Yes, you can use a third-party theme, but please note that you may need custom integration, please check this doc: Compatibility with third-party themes - HivePress Help Center
This bundle All Extensions - Get unlimited access to all extensions | HivePress Extensions contains all our extensions, but it does not include the theme. You can use all these extensions and for example, our free ListingHive theme.
