What are the dynamic tags in email customization?

So we are trying to override the current email for order completed, and we would like to know the dynamic tags, we only found user_name in the docs, so plesse what are the other dynamic tags?

We recommend automating this on the email service side (for example, if the subject line is “Listing submitted,” then forward it to a particular address).
