How can a vendor buy a listing or a customer pay for an offer on their request, if Woocommerce is not required?
I am trying to understand the process and what triggers the sales if WooCommerce isn’t used.

Yes, in this version, the WooCommerce cart feature does not work with HivePress because there is no integration. However, we plan to add it in future updates. The simplest option is to delete this page in WordPress Dashboard > Pages and disable the cart feature in WooCommerce settings.
Regarding payment, WooCommerce is required because all orders and payments go through WooCommerce. For more details, please refer to this documentation: How to start accepting payments - HivePress Help Center
